Roasting Pumpkin Seeds

So you’re carving a pumpkin for Halloween, why not take some time to roast up those pumpkin seeds for some yummy fun as well?! (If you want some tips and tricks for carving your pumpkin, check out this thread!)

Roasting pumpkin seeds is a fairly simple task, all you need is about 45 minutes, one medium pumpkin, some salt, extra virgin olive oil, and any spices you might want to use to jazz up the flavour. (Cumin? Chili powder? Smoked Paprika?)

Steps:
  1. Preheat oven to 400°F ( 200°C)

  2. Remove seeds and strings from the pumpkin, place the mass of pumpkin seeds in a colander and run under water to rinse and separate the seeds from everything else.

  3. To get the salt more into the pumpkin seeds, bring them to a boil in salted water, and boil for 10 min. (Salt water at a ratio of 1 tbsp for every 2 cups of water, adding more salt for saltier seeds) Remove from heat and drain the seeds.

  4. Coat the bottom of a roasting pan or thick baking sheet with approximately 1 tsp of olive oil. Spread pumpkin seeds out in a single layer, and toss to coat with the oil. (If using extra seasonings you can sprinkle them on now as well!)

  5. Bake on the top rack of the oven for 5 - 20 min until browned. Smaller seeds will brown faster so keep an eye on it!

  6. Remove from the oven and let it cool completely before enjoying.


Pumpkin seeds are great to eat whole though you can crack open and remove the pepita if you prefer.

Omg! I love pumpkin seeds!

Tbh - I've found I prefer to do them on a dehydrator - they stay crunchier. Sprinkled with alittle sea salt - yum!

Probably the seeds lol but I won't turn down a good piece of pumpkin pie :)

That sounds yummy too, I suppose depending on how you use the oven it can be like a mix between roasting and dehydrating! Either way, yum!

Also, I sort of miss pumpkin pie, my mom always made her pastry with lard which would make me sick, but I like to eat the filling! Now I may have to see if I can make a vegetarian or vegan version that tastes the way I like.

@EmotionsListener I hope you can find a vegan version you like. I did look quick and saw there's quite a few recipes to choose from but you might need to tweak the recipe to your tastes.

We roast the pumpkin seeds, they not only taste good but they're also good for removing parasites from the body.

I'm glad you liked the picture!

Though I am sorry to hear your pumpkin seeds failed to germinate, there are some tricks to help them along but we always got our seeds from the seed catalogue each year picking different varieties or old favourites if only because it was easier than storing and sewing from last year and tended to result in a higher germination rate. If you can't tell, I really miss having a vegetable garden. 🥕

I'm allergic to pumpkin seeds :')

but this is a good idea for anyone who isn't! Use up the whole pumpkin, don't waste it if you can help it :)

Sorry to hear you are allergic, we definitely don't want you eating those seeds!

But use up instead of waste is what I prefer when it comes to food. I'm not as food of the pumpkin flesh from the traditional "jack-o-lantern" pumpkins, but people don't seem to realize that's edible too! (So long as you aren't allergic that is! 😉)

It seems those great minds do! I just knew that if I was going to post about carving pumpkins I had to at least encourage others to not waste food!

That sounds like a lovely recipe, I make pumpkin soup sometimes, though taco season sounds like it would be an interesting twist. I suppose I could even throw in some chick'n (vegan fake chicken) and see what happens.
