So I've been out of the swing of cooking for a long time and have noticed I'm A) getting sick of eating the same foods on repeate and B ) spending way too much money on eating out and foods and drinks that aren't particularly good for me.
I definitely want to get back into eating from home and want to try new recipes and make it fun by doing it with others.

I'm cooked a couple of things last week and am going to cook this 👆 tomorrow to get the thread started.
It isn't particularly nutritious, so I'm going to add some broccoli and mushrooms to add a boost of vitamins and colour 🥦🍄🍜

Your son is privileged to have a mother like you, always trying to give him the very best! (so many children are fed junk food...)
My favorite recipe book is "Real Fast Food" by British chef Nigel Slater. His idea is exactly the one you exemplify with this dish: "real", healthy food (even gourmet) that can be made fast and easily. It's a great concept.
Congratulations on your great dish and best of luck with your kid! You are teaching him to eat healthy, showing that healthy might be also very enjoyable with much variety. Such a great part of good health and wellbeing! A habit that will benefit him all his life.

You are also lucky that your son likes healthy and varied food. And trying new things. Some kids stick with a few familiar dishes, and reject anything else. Your son is quite adventurous food-wise!
I am glad that you were curious about that book and could get it so cheap. I liked it because it changed my way of thinking about cooking. I hope you too find appealing his tips and tricks, as well as the recipes. There is some affinity with the "nouvelle cuisine" approach, the chef going to the food market to select the best ingredients, and then preparing dishes with great ingredients but very little processing.
It makes me happy that you are enjoying so much all of this, and that you have been so successful with your project of getting back to cooking at home, trying new recipes, and making it fun by sharing your adventure with others!

@HealingTalk my sons loving that book. Thanks for the suggestion. He's really into cooking when he gets into it and loves reading recipe books. He's been making very gourmet scrambled eggs recently and it's open his mind to new flavours and ideas 👍
Seems very cheese and butter heavy though and not a lot of nutritious option/shy on the leafy greens and veggies.

I must try and remember to find him something else with lots of veggies (that's easy and not tasteless), to try and get him into the nutritional side of cooking.

Not a recipe but a method: sheet pan roasting.
It's not complicated & takes little time to do. Best things to roast on a sheet pan are the firmer vegetables (particularly root ones) & meats. On the other hand, baked apples are a thing so presumably certain fruits would work also, if you do it right. My favorite foods for this are Russet potatoes, chicken or turkey sausage, & cauliflower. I've used bell peppers...they work but the pieces tend to wilt in the oven.
Basic directions: Preheat your oven to 350 deg. Fahr. / 175 deg. C. Make sure the shelf is in the middle of the oven before turning it on.
Pre-process the food if necessary (i.e., peel & wash the potato). Chop it up into pieces no more than 1" / 2.5cm thick. Grab your sheet pan, dump the veggies/sausage pieces/whatever into a pile in the center of the pan. Dribble two to three spoonfuls of olive oil on the pile; gently toss with spoon & fork. Spread pieces evenly over the pan & season with salt, pepper, paprika, or whatever you want. Use as much seasoning as you want. Then put the pan in the oven. After 15 minutes or so, turn the oven off & wait three minutes to get that free heat.
Open the oven, remove pan with pot holders or a folded towel covering your hands. If you have the energy you can scrape the pan with a spatula & push the roasted goodies onto a plate & eat them there. If not, just say "screw it" & eat 'em right out of the pan.

looks very good but what is smoked Paprika? I have never seen that, or is it just done on the stove?😊

I'm not sure if you're asking me or Sammy? It's easy to get hold of in most super markets. Paprika would work fine instead. Apparently the red peppers are dried over an oak fire instead of on the ground, before being ground to a powder.

Texas Beef Skillet / Cheesy Chips and Beans
This recipe is my Mom’s. I grew up eating this and it was one of my favorite meals. It brings so much comfort and it’s so healthy and cheap to make. Who knew growing up that my mom could cook such great tasting, healthy meals on a budget? I never knew then, but I’m happy to know now! The only modification I make is that I don’t use peppers (Mom would use 3 Tbs chopped green pepper), and I bump up the chips and cheese.
Ingredients:
1 lb. Ground Beef
3/4 c Chopped Onion
16 oz. can Diced Tomatoes, with liquid
15 oz. can Kidney Beans, with liquid
1/2 c Water
1/2 c Rice, uncooked
1 1/2 tsp Chili Powder
1/2 tsp Garlic Salt
1 c Shredded Cheese
Chips, crushed
Instructions:
In a high sided large skillet, cook beef and onion until meat is browned and onion is tender. Drain off fat. Stir in tomatoes, with liquid; kidney beans, with liquid; water; rice; chili powder; and garlic salt. Bring to a boil, reduce heat. Simmer covered 20 minutes stirring occasionally. Top with cheese. Cover and heat 3 minutes. Sprinkle chips around edge.
Here's another very healthy dish.
Curried Sweet Potato Soup
Serves 6 – 45 minutes total
This is a real crowd pleasing dish. Everyone from my husband to my 4 year old loved this soup. I think everyone had seconds even. Hubby and the kids chose to top their soup with crackers like we do with split pea soup. It thickens it up and adds a little crunch.
Ingredients:
- ¼ Cup Olive Oil
- 1 Large Sweet Onion, chopped
- 1 tsp. Black Pepper & Salt
- 4 Cloves Garlic, chopped
- 2 tsp Curry Paste (or powder)
- 1 tsp Coriander
- 8 Cups Chicken Stock
- 3 Large Sweet Potatoes (about 3 pounds), peeled and cut into 3/4” pieces
- 2 Large Carrots, peeled and chopped
- 1 Tbs Optional toppers:
- lime juice
- cilantro leaves
- toasted pumpkin seeds
- pumpkin seed or olive oil
Directions:
- Heat the olive oil in a large pot. Saute onions with salt and pepper until translucent and soft. Stir in garlic, curry and coriander; cook until fragrant, about 1 minute more.
- Add stock, sweet potatoes, and carrots. Cover and bring to a boil. Reduce and simmer, stirring occasionally, until sweet potatoes are tender (about 20-25 minutes).
- Puree the soup in batches in a blender or with an immersion blender. Stir in lime juice.
- Serve topped with preferred toppers.
Not something I'll be making anytime soon, as they make way too much mess and take longer than I have to give to cooking...
But... If you're not cooking on a budget, have the time to cook, like the sound of them and don't mind a bit of cleaning up...

@Sasher I have mastered roasted red potatoes. Cheap and easy to make. I add minced garlic. Has to be minced for how I do it.
@MindGazer91 umm, they sound yum. Feel free to share your method. I'm making mash potato tomorrow to put with some roasted veg and salmon. I've figured that I can boil the potatoes with the skin on, which saves time and mess, and when I press them through the potato ricer, the skin flakes right off 😃
@Sasher Pre-heat oven to 250 degrees and put rack on the lowest shelf you can. Cut the red potatoes into quarters. Now I prefer olive oil for this part. Cover all the pieces in the olive oil then sprinkle as much minced garlic as you like on all sides of the potato. On the baking sheet liberally put olive oil or just cooking spray at this point. Make sure the skin sides are facing up. Put it in the oven then it generally takes about 20 mins. Depending on your oven and the size of the cut up red potatoes. It should be a slight crunch on the skin and the inside soft as butter. I could put garlic in anything.

Lately I made a pasta with basil tomato sauce and foraged mushrooms I cooked in olive oil, garlic and herbs from the farmers market. I threw in handfuls of parsley too. Was good.
Another good pasta dish I tried recently was pasta with red sauce, button mushrooms and sausage. The sausage was humane from a local farm that supports the community with charity work and donations. The mushrooms were organic and the red sauce was GMO free.
I'm wondering if quality of ingredients and simplicity produces the best outcome. 🤔 What have you found out as far as ingredients?
Oh, I've also lately tried waffles and coffee with vanilla ice cream made with real vanilla bean.
Smoothies with a base (water, juice, coffee, milk/mylk), yoghurt or a banana, a handful of greens and maybe some fruit and protein powder is good. Can mix and match.
Having fermented food around and growing your own sprouts or herbs or lettuce are good things to do because once a food makes it to the grocery store it's 'dead' in that it has been out of the ground too long and now takes more energy for your body to digest then it gives to your body in nutrients. A good supplement might help too such as magnesium and calcium with vitamin D.
And if you have any type of indigenous background focusing on more fats and protein in meals is key to prevent malnutrition, anemia or hypoglycemia. This is not updated yet as of one month ago in the national food guides. In fact the food guides give the opposite advice. So things like salmon, nuts and seeds, avocado and pemmican as needed.
One more thing. Foods like mushrooms and sunflower sprouts have a surprising amount of protein. A handful of sunflower seeds have as much as a chicken breast. That's why body builders or anyone who eats vegan don't turn into wisps of smoke and have won body building championships and prevented many health complications and diseases. If they know what they're doing.

Am not sure, I haven't paid that much attention, but always try to go for ingredients that are the most natural and raw. i.e, I'll get 100% raw peanut butter over the ones with other ingredients in, even if it means comprising on flavour a little.
Yeah, I enjoy smoothies and milkshakes regularly. Frozen bananas, Coco powder, peanut butter and a touch of honey and cinnamon with organic cows milk, is a favourite of mine atm.
Yeah, I've really had to bump up the fats and proteins in my diet since going to the gym. I was getting ill at one point eating a mostly vegetarian, low fat diet. So have added in plenty of nuts, fish, avocados and eggs.
I used to be really anxious around food and went really extreme at one point. Now my goal is to try and stay relaxed around food and diet. To try and eat raw where I can without causing myself any stress and while trying to balance things on a budget. I always buy organic milk and eggs just for the sake of knowing the animals are treated a little better.
Yeah, for sure, I agree. It's not something I have time and energy for but I do take some supplements, magnesium being one of them that has made a big difference.

Maybe exploring a cookbook could help - I did that and found a Thai chicken salad recipe I really liked...

It's been more about time, energy and keeping the house clean more than anything.
I wasn't eating particularly healthily when eating out, so nothing I'd want to be making at home.
I've started adding in tray bakes, roasted veggies and fish etc where there's plenty of nutrition with almost non of the mess. And it only take s 15/20 mins.
I've been thinking about crockpots.. Especially now it's getting cold 👍

Veggies with a dip, then fried veggies with sauce is healthy and pretty quick and easy.
And if you have a way to slow cook on cast iron, I suggest portobello mushrooms and onions done long, low and slow for a veggie sandwich or burger.
