Hey 👋
So I've been out of the swing of cooking for a long time and have noticed I'm A) getting sick of eating the same foods on repeate and B ) spending way too much money on eating out and foods and drinks that aren't particularly good for me.
I definitely want to get back into eating from home and want to try new recipes and make it fun by doing it with others.

I'm cooked a couple of things last week and am going to cook this 👆 tomorrow to get the thread started.
It isn't particularly nutritious, so I'm going to add some broccoli and mushrooms to add a boost of vitamins and colour 🥦🍄🍜

@Sasher I dont know if anyone has mentioned Chef John with FoodWishes.com? He has recipes for EVERYTHING under the sun. I speak from experience when I say his recipes can be trusted and consistently turn out great. I have made easily over 100 of his recipes, if not more, and they are not just successful, they are DELICIOUS! I often repeat his recipes, too. I cannot sing his praises enough. 😊
On the right hand side of his blog, the recipes are categorized by type of cuisine, or breakfast, lunch, dinner, etc. I highly recommend his work. He is genius, and his videos are awesome. I love his personality and schtick. 😄

So things take an unexpected turn in life at times and I've been more busy than I want to be lately. The cooking has ended up going on the back burner (no pun intended 😆😆) but eating habits have still been better than they were a few months ago.
Not the most appetising looking meal, but finally made this Creamy Orzo Butter Beans recipe again. It's pretty nice and pretty simple to cook. (It does make a few pots though!)
It has a bit of tang, a bit of spice and comfort from the Orzo and Beans. The Kale dressing is yum imo.
Looking forwards to making a Pad Thai again soon 😃😋

@niceSea1350 you're welcome! Let me know how it goes. You're supposed to put the onion in whole (incase you miss that bit). I chopped them up the first time and was scratching my head when it says 'remove onion' 😆😆

Does anyone have anymore tried and tested recipes?
Things are getting a little boring here as I've been making the same few meals on repeat again.
(Something nutritious, that doesn't take forever or make tonnes of mess would be ideal.)
I'm going to make this Pea Soup next.
It's simple, tasty and freezes well, so I'm going to double or triple the recipe and batch freeze it!
Wrap bread, pre-prepared veg of choice, hummus, oven cooked falafel (additive and preservatives free), gherkins or avocado.
Super-easy, super mess-free, nutritious fast food!

I made a pot of fresh vegetable Soup from scratch. It turned out pretty good. I don't do a lot of cooking these days because I have had three surgeries on both hands, and they are pretty weak. My husband and I do a lot of eating out, and the fact that I am old and tired of being the only meal preparer, 😊LOL.

Aww, sorry to hear. Eating out can be a lovely experience too! Not sure where you are.. But, It's difficult in England to eat healthy unless you eat from home. Especially on a budget.
Okay, not the most appetising looking meal! But...
Was just served this by my son..
It's full of nutrition and is super easy to cook with only a little bit of mess.
1 X Steamed (bag of pre-prepared) mixed veg
1 X Portion of rice sticks
1 X Portion of home made satay sauce
Recipe for satay sauce here we added a teaspoon of vinegar instead of lime juice. (Heard it works better)
I'm not sure it's quite a clean eating win but it's the next best thing. I'm going double the batch of sauce next time as I imagine it will keep for a short while and it'll save on time.

@WorkingitThrough2 same. That's why I'm finding these pre-prepared bags of mixed veggies great. The sauce is yum over the veggies.

@WorkingitThrough2 generally okay. Had a rough couple of day but it's always the case when I'm over coming trauma and moving forwards with life.

@WorkingitThrough2 I'm still not completely in the routine of cooking yet. My dinner tonight was a hot chocolate made from dark chocolate, date syrup and milk. And peanut butter and banana on toast.

Life is going fast and even though i like cooking meals that can take 2 hours in preparation i also like to look for recipes that will make me focus more on my busy schedule. @alphalistens thanks! They all look yum. I love overnight oats.. I used to have them all the time, but got addicted to a frozen banana milkshake (with cocoa powder, peanut butter, honey and cinnamon) for breakfast. I feel like the cocoa powder soothes my nerves and the banana, honey and peanut butter give me the energy and strength I need for the day. Seeded toast with peanut butter, sliced banana, honey and cinnamon is another breakfast I've been meaning to have again to switch things up a bit.

@SasherI love this! I'll have to remember to check the thread now and then. I just had some egg salad sandwiches and honestly I forgot how much I love something as simple and nutritious as that.
