Hey 👋
So I've been out of the swing of cooking for a long time and have noticed I'm A) getting sick of eating the same foods on repeate and B ) spending way too much money on eating out and foods and drinks that aren't particularly good for me.
I definitely want to get back into eating from home and want to try new recipes and make it fun by doing it with others.

I'm cooked a couple of things last week and am going to cook this 👆 tomorrow to get the thread started.
It isn't particularly nutritious, so I'm going to add some broccoli and mushrooms to add a boost of vitamins and colour 🥦🍄🍜

@Sasher Yaaay! It looks really yummy! I really can't state enough how much I love beans in all their shapes and sizes :-)
I've been on a pretty low budget this year so I've been getting creative to make healthier recipes too.
I like to sauté some chicken in worsteshire sauce with black pepper and/or red pepper flakes, basil, paprika then add it over rice mixed with diced peppers and another vegetable of choice either broccoli or beans.
Stuffed bell peppers is another favorite that's easy to make and can add all different combinations of filling including with or without meat, rice, vegetables and cheese.
Breakfast when it happens is usually plain Greek yogurt with frozen berries or oatmeal with frozen berries

I've tried making stuffed peppers in the past. Enjoyed them.. But not a massive fan for the effort put in.
Breakfast sounds good too. I used to eat oats and fruit in the mornings but usually have frozen bananas blended with peanut butter, cocoa powder, cinnamon, a touch of honey and milk, which I absolutely love! 😋

Hello Sasher.
This is a simple recipe I am enjoying lately. It is an easy pumpkin and potatoes pie. The recipe written in my broken english is as follows:
- sheet of puff pastry or brisée pastry (store bought is okay)
- pumpkin
- potatoes
- mushrooms (optional)
- butter
- grated parmesan (or other cheese)
Boil potatoes and cook slices of pumpkin in the oven. Line a round mold with baking paper, then put the sheet of dough in it (leaving some dough in excess to then fold it over the top). Fill with pumpkin and potatoes both in pieces. Can add some mushrooms too if you like, without cooking them first. Add on top some flakes of butter and grated parmesan. Fold the dough over the top. Can put a thin layer of butter on the dough as well. Cook in preheated oven at 180°C for about 30-35 minutes, or until the dough gets light golden.

Honestly I didn't have high hopes for this while mixing the lemon into the raw egg 😬. I haven't used that method before and the recipe calls for way too much water so wasn't lucking forwards to this. It is surprisingly nice though. The dill and lemon flavours are lovely.
I think it'd be nicer as a sauce for a pie. Flaked white fish through it, the sauce being super thick and using it as a filling in filo pastry parcels.. I might give it a try sometime as it's much healthier/more nutritious than a tradition fish and white sauce pie.

Hey I'm glad you enjoyed it! I was worried about the egg thing too the first time as I'd never done it, it seemed complicated but then it was fine hehe. This soup is really good leftover when the flavours have a chance to come out more.
Love the pie idea! I have never made pie or use filo pastry before, I wish knew how because that sounds amazing🤤

I like to start the day with oatmeal and fruits. Sometimes yogurt. Some coffee or tea. Maybe a muffin or a kombucha. Occasionally an omelet and toast, biscuits and gravy, sausage egg and cheese with toast or English muffin or homemade flaky crusty biscuits.
Fur lunch I like a large salad with egg or fish or perhaps some other protein. Cheese is great and I like lots of various veggies all prepped to be bite-sized, nuts and seeds, fruits welcome as well.
For dinner I like mostly cooked vegetables. Roasting or grilling is great, or stir fried in some kind of sauce I whip up on the spot, as I go. Perhaps a little protein. I don't generally steam anything or boil much besides potatoes occasionally or collected bones (freeze until enough for a pot) for stock.
I do my best to practice a plant-forward diet prioritizing 9 to 12 servings of plants every day, ideally fresh fruits (generally, less than 5 servings) and fresh vegetables. Allowing for 1 or 2 servings of whatever protein, ~3 to 8 oz is plenty, depending on fitness and nutrition goals.
So basically I aim for 2 - 3 servings of vegetables and 1 - 2 servings of fruit every meal, ideally fresh. Whatever calories are left, I eat whatever I like, realistically (CICO). I don't really keep track of any of this. I've listened to understand serving sizes and portion control and eat the plants first, filling up on bulky but calorically sparse foods helps satiation.
I don't follow many recipes unless I'm baking. I like to use what is in season and cook intuitively. <3
@Leonydus I usually follow a recipe and then adjust based on the 5 tastes and what's I think is missing. I love it when I follow a recipe and it's on point - Tuna Patties 👈 this is one of them 😋

The thing for me is I'm super limited on time. So couldn't eat like that if I tried.

I think I'm going to try and move towards more plain foods.. My sisters husband cooked a really simple piece of salmon (only slightly seasoned), with lightly season skin on mash and veg. It was really nice and light on the stomach. I've noticed I hate my house smelling like food too, so think I'm going to try more basic plain meals that are low odour 😌

I find it frees time and saves money. The spent time is ultimately self-care and I'm really creative so expressing myself through cooking is all around just lovely!
@Leonydus yeah for sure it would. I'm glad you're enjoying it.
I personally don't cook regularly enough though and don't have time to fit regular cooking into my routine at the moment so just trying to start changing my eating habits and fitting in what I can.
