one of the things I do that helps me with mindfulness is cooking. I know I know, you all are probably thinking cooking? Really? But yes really. I LOVE to cook, grill bake you name it. It love discovering new flavors textures trying new recipes seeing how a simple mixture of tastes smells and textures can produce a (L) beautiful and delicious work of art. And I do it with joy and love and of course my music.

Hi! @LPyMP , I find that having passions is one of the best things you can do for your mental health, mine is reading and sewing, it comes and goes in waves but it gives me just that little kick of motivation to keep myself going

It's definitely a huge benefit when you love to cook. Me, not so much hehe! But I do like learning to cook. For example I want to cook a whole chicken with potatoes in a roasting pan, but not sure which recipe to use hehe - so many out there! So I do get a little nervous with cooking. I did try to make banana bread a few weeks ago but after cutting it open and slicing it, it looked like part of the bread wasn't cooked all the way and was more gooey than the rest, so I wasn't sure if it was even good to eat. I even did the toothpick test and it came out ok. I guess I should've done it more throughout the bread.

Cooking is definitely a great talent to have - keep up the great work! heart

omg. I have the easiest recipe for roast chicken.

So what you want to do is once your chicken is defrosted pat it dry and slip your fingers under the skin just to separate from meat. Generously season with salt under the skin throughout the chicken. Over the skin sprinkle with your choice of seasoning and tie drumsticks together and tuck wings under so that it cooks evenly. In a separate bowl cut up potatoes or use the tiny potatoes and pour a tiny pit of olive oil and season with salt pepper and I use McCormick salt free garlic and herb seasoning. Mix to make sure you coat them evenly and line cooking pan/roasting pan around chicken with the potatoes. Cover with aluminum foil and cook at a low temperature of 275 for 2.5 hrs, uncovering chicken in the last 30 minute to brown. In a small mixing bowl melt 2 tablespoons butter and mix with same seasoning you used on chicken and with a basting brush quickly baste chicken and let brown for last 30 minutes.

Tip if you can let it brine for at least 3-4 hrs minimum that helps.

@LPyMP Hi! Wow thank you so much for that recipe! laugh How do you defrost your chicken? Ours wasn't defrosted on the inside and had to use water to melt the ice and get it out. It was a chore lol. Also, what roasting pan do you use? I had used a one-timer from the grocery store, but not sure what kind to get for long-term. If I get one I want to keep, should I cover it with tin foil under the food to make for easy clean-up? Thanks again, and much love πŸ’œ

Mine looks like this and if there is anything stuck sprinkle with a little bit of table salt let sit and it should come off easily.

Defrost chicken safely:

The best way to safely and quickly defrost chicken, he says, is in a cold water bath. In the kitchen sink, submerge tightly sealed frozen chickenin a bowl of cold water. Turn on the tap to slowly run cold water over the bowl so that it continuously replenishes.

I agree on recipes but what I found out is that lack of good kitchen ware also makes it harder to do exactly what you want with your meals. For instance, I got a roasting pan from Winco that made it more handy to melt cheese... You see, I like making desserts and these usually demand a big number of such serveware. Fortunately, it's really easy to get want you want from the Internet nowadays.

When I loved to cook before depression deprived me of that too I loved discovering foods but mostly improvising....
