Thanks for adding this.

I'm going to share a very easy recipe that  I make when my chronic pain is making things harder to do.  I live alone but tend to cook something that will last 4 to 5 days.

Please note that as I'm from New Zealand you might need to find similar ingredients from your own country. Feel free to ask me if your not sure what I mean by an ingredient. 

Easy Cottage Pie Casserole 

Ingredients 

500 grams Beef Mince (ground beef)

1 can pasta sauce or diced tomatoes with herbs

2 cups grated cheese

1 bag (frozen) Mr Chips Rosemary & Garlic Potato Roasties 900g

1 cup frozen mixed vegetables your choice 

1 teaspoon of powdered beef stock 

Method 

1. Brown mince with beef stock in a frying pan until almost fully cooked. Add pasta sauce (tomatoes)  and simmer together for 5 mins.  While simmering microwave potatoes for 4 mins to defrost. (You can defrost these before you start cooking.)

2. Add mince mixture, vegetables, half the potatoes and half the cheese to a bowl and mix to combine. 

3. Transfer the beef mixture to an oven safe dish.

4. For the cheesy potato topping, tip with the remaining potatoes and grated cheese.

5. Bake at 200 Celsius for 30 minutes until nice and golden.

I like the idea of the frozen vegetables. I haven't mixed things in like that before but that makes it really easy. Thanks, not only for the recipe (sounds delicious) but for the additional great idea. 😁.

Your recipe reminds me of a dish my mom used to make called shepherd's pie with layers of hamburger mashed potatoes and kernel corn baked in a casserole dish too.

I saw once on Food Network that "cottage pie" and "shepherds pie" are basically the same dish just from different countries....and the ingredients differ based on the country....the cottage pie is mainly a European dish made with their ingredients, with the main meat being lamb.....and shepherds pie is the American version using our ingredients, with the main meat being beef.....at least that is how I understand it from the show I was watching.....someone correct me if I'm wrong....

I always thought shepherds pie was with lamb, sheep being the convenient meat source for a shepherd. And thus cottage pie was beef. But I don't know if that is true.

I believe you are correct and I wrote it backwards.....thank you for the catch.....with that said, here in the US, lamb is not something that is usually on the lay person's menu, at least not the lay people that I know and interact with, so beef is probably used more here yet they still call it shepherds pie....honestly.....its splitting hairs in my opinion.....

This is one of my favorite recipes. I love it, it’s so hearty and filling. I used chick peas instead of white beans the other day because I was out, and really liked that variation.
