Vegetarian/Vegan Morzarella Cheese
Add to a blender
100 gr almonds soaked overnight and peeled
1/2 tsp salt
1 TBSP nutritional yiest (vegan cheese) or 1 heaped TBSP feta cheese crumbles (vegetarian cheese)
1 cup of water
1 garlic clove
3 tsp cassava starch (today I just used cassava flour and it worked well too)
blend on highest speed until everything is really smooth
pour into a non-stick pan and cook until it becomes thick. It will form a ball in the pan. Be careful not to burn it. It might take about 8 minutes medium heat.
Put the mixture into a bowl
Prepare a bowl with ice water
With a small tablespoon (or just use hands) take out small parts from the mixture, form a ball with wet hands and dip it into the ice water. Put on a plate.
Do that with the rest of the mixture. Let all balls cool down and put into fridge.
Enjoy
Vegan Cabbage rolls
Steam or boil a green cabbage (or the type you like) in a large pot of water to make it tender (about 5 to 10 minutes). Once boiled, use a small knife to cut the thick stem of the leaf to take off the leaves easily and sort them by size.
Mixture
Boil 2 cups of water and
add vegan stock, 1 chopped onion, 1 cup of soja chunks, salt and pepper to taste.
Cook on slow heat for about 5 minutes. Add 1 TB tapioca starch (cassava flour or any other flour works as well).
I get 6 cabbage rolls from 1 green cabbage and still have a smaller green cabbage left to stir fry for another time.
Take the biggest 6 leaves and put the remaining leaves on top.
Add the filling
Add the filling to cabbage leaves and roll.
Wrap with a food safe thread to close them properly
Fry 1 big onion with cabbage rolls in a pot until the cabbage rolls start to turn brown. Add water, stock to taste and caraway seeds (about ½ tsp) and if liked also some vegan liquid smoke.
Cook for about ½ hour on slow heat. (add water if needed)
Take out cabbage rolls and bind the stock with tapioca starch and if needed add more seasoning to taste. Pour this sauce over your cabbage rolls when serving them.
They freeze well too.

Tofu/chick pea chocolate pudding cake
Mix in a blender
1 cup of oats finely ground with 6 big dates and 1 tbsp cacao powder, if needed add some lemon juice to get a smooth dough
Put this dough in a small cake tin or flat glass bowl, press it down so the bottom of the container is covered with dough
Mix in a blender
½ paket of tofu (preferably silky type but all work for the recipe)
2 Tbsp cocoa powder
If wanted any spices like vanilla (optionally)
1 cup of soft cooked chick peas (cooled down)
blend until well combined and fine
Add to your container with the dough and let cool in the fridge for at least 1 hour.

Hi, I just wanted to share an idea about making vegetarian burgers in an easier way. So here it goes 😀
uncooked ingredients!
1 cup of brown or green lentils
1 cup of rolled oats
1 cup of linseeds
1 cup of quinoa
1/4 cup of chia seeds
Grind fine, this will be your base for burgers.
Take 1/2 cup (or more or less depending how much burger you need) and soak in 1 cup of hot water (you might even need to add more water).
Add 1 finely chopped onion, 1 pressed garlic clove, 1/2 tsp curry powder, 1/4 tsp cayenne (optionally!), about 3 tb ketchup, some vegan liquid smoke and salt to taste
Let sit for about 30 minutes.
Add some grated parmesan cheese (optionally), 2 egg whites and some flour (I use cassava flour) and form burgers.
Bake at about 180 C (360 F) for 20 min. You can fry too.
