Every year on the second Friday of October—October 11 this year— the world celebrates World Egg Day, a moment to appreciate and honor this adaptable, reasonably priced and nutrient-dense food item that helps feed the world. More than fifteen different types of vitamins and minerals can be found in eggs. Egg whites are low in calories and cholesterol but high in protein. They can be eaten prepared in many ways!

I like to mix some egg white (eggs from free running chicken) with tofu and spices and stir fry!
