Pumpkin Pie Recipe

Here’s one of my absolute favorite dessert recipes—I just love it! This pumpkin pie is perfectly spiced, with a buttery crust and creamy filling. Paired with a scoop of vanilla ice cream, it’s a comforting treat that’s hard to beat. Enjoy!

Pumpkin Pie Recipe

Ingredients:
For the crust:

  • 250 g flour
  • 125 g cold butter, diced
  • 70 g sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 2-3 tablespoons cold water

For the filling:

  • 400 g pumpkin puree (you can make it fresh or use canned)
  • 150 g sugar
  • 2 eggs
  • 200 ml fresh cream (or milk)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions:

Making Fresh Pumpkin Puree (optional):

  1. Preheat oven to 180°C (350°F).
  2. Cut a small pumpkin in half, scoop out the seeds, and place the halves face down on a lined baking sheet.
  3. Bake for 45-60 minutes, or until the pumpkin is soft.
  4. Let cool, then scoop out the flesh and blend it until smooth. Now you have fresh pumpkin puree!

Preparing the Crust:

  1. In a large bowl, mix flour, sugar, and salt. Add the cold butter and rub it in with your fingertips until you get a crumbly texture.
  2. Add the egg and vanilla, mixing until the dough begins to form. If it’s too dry, add cold water, one tablespoon at a time, until it comes together.
  3. Form a ball, flatten into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Preparing the Filling:

  1. Preheat your oven to 180°C (350°F).
  2. In a large bowl, mix the pumpkin puree, sugar, eggs, cream, cinnamon, salt, and vanilla extract. Whisk until smooth.

Assembling the Pie:

  1. Roll out the chilled dough on a floured surface to about 3 mm thickness. Transfer to a pie dish, pressing gently along the edges, and trim any excess.
  2. *** the base of the crust with a fork to prevent bubbling.
  3. Pour the pumpkin filling into the crust.

Baking:

  1. Bake the pie for 55-60 minutes, or until the filling is set and the top is lightly golden. Insert a knife into the center, it should come out clean when done.

Cooling & Serving:

  1. Let the pie cool to room temperature.
  2. Serve with a scoop of vanilla ice cream for an extra treat! Enjoy!
