Here’s one of my absolute favorite dessert recipes—I just love it! This pumpkin pie is perfectly spiced, with a buttery crust and creamy filling. Paired with a scoop of vanilla ice cream, it’s a comforting treat that’s hard to beat. Enjoy!
Pumpkin Pie Recipe
Ingredients:
For the crust:
- 250 g flour
- 125 g cold butter, diced
- 70 g sugar
- 1 egg
- 1 teaspoon vanilla extract
- Pinch of salt
- 2-3 tablespoons cold water
For the filling:
- 400 g pumpkin puree (you can make it fresh or use canned)
- 150 g sugar
- 2 eggs
- 200 ml fresh cream (or milk)
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions:
Making Fresh Pumpkin Puree (optional):
- Preheat oven to 180°C (350°F).
- Cut a small pumpkin in half, scoop out the seeds, and place the halves face down on a lined baking sheet.
- Bake for 45-60 minutes, or until the pumpkin is soft.
- Let cool, then scoop out the flesh and blend it until smooth. Now you have fresh pumpkin puree!
Preparing the Crust:
- In a large bowl, mix flour, sugar, and salt. Add the cold butter and rub it in with your fingertips until you get a crumbly texture.
- Add the egg and vanilla, mixing until the dough begins to form. If it’s too dry, add cold water, one tablespoon at a time, until it comes together.
- Form a ball, flatten into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Preparing the Filling:
- Preheat your oven to 180°C (350°F).
- In a large bowl, mix the pumpkin puree, sugar, eggs, cream, cinnamon, salt, and vanilla extract. Whisk until smooth.
Assembling the Pie:
- Roll out the chilled dough on a floured surface to about 3 mm thickness. Transfer to a pie dish, pressing gently along the edges, and trim any excess.

- Pour the pumpkin filling into the crust.
Baking:
- Bake the pie for 55-60 minutes, or until the filling is set and the top is lightly golden. Insert a knife into the center, it should come out clean when done.
Cooling & Serving:
- Let the pie cool to room temperature.
- Serve with a scoop of vanilla ice cream for an extra treat! Enjoy!
