I love all chicken soup recipes and middle eastern vegetarian stews!
A quick note to anyone who wants to provide a link for a specific recipe. Make sure you select what you want linked, and click on the hyperlink button above you in your message box. If you don't know it, it's the one that looks like a couple of chains linked together. It's in a box by itself in between the underline and size boxes. If anyone needs help with the previously posted recipes, respond to me here and I will gladly edit your posts for you.

Here's one of my faves to get anyone interested a -cookin'. If some of the ingredients aren't easily available, they are super easy to subsitute, or even leave out.

Nothing specific off the top of my head right now, but I like skinnytaste although I often adjust things slightly. She has much more than slowcooker stuff, but those are the recipes I tend to use the most off her site.

Ribs are by far my one of my fave foods. I could eat them for every meal if I could! I have many different way I make ribs, barbecue is the best but the one I like in a slow cooker I will link wink

I use mine year round!

(I use way less butter though and also put 1/4 cup water in the bottom)

Also:

- Mixed beans with a ham shank, hock or neck bones (celery, carrots, onion, garlic, fennel bulb sauteed in butter first, then toss in with the beans)

- Pork roast, coat generously with worcester sauce, then seasoning salt

Mediterranean Vegetable Stew
INGREDIENTS | SERVES 6
2 tablespoons extra-virgin olive oil
4 garlic cloves, chopped
1 red onion, chopped
1 red bell pepper, seeded and chopped
1 eggplant, chopped
1 (15-ounce) can artichokes, drained and chopped
⅓ cup kalamata olives, pitted and chopped
2 (15-ounce) cans diced tomatoes
4 cups Vegetable Broth (see Chapter 3)
1 teaspoon red pepper flakes
teaspoon dried oregano
teaspoon dried parsley
1 teaspoon salt
teaspoon pepper
Preparing Eggplant
Some people salt eggplant prior to cooking in order to remove bitterness, but
this step is not required for making delicious recipes using eggplant. The skins
can be removed, but this also is not necessary. Eggplants, called aubergine in
almost all other parts of the world, can be boiled, steamed, sautéed, stir-fried,
deep-fried, braised, baked, grilled, broiled, and microwaved.
In a 4-quart slow cooker, add all ingredients. Cover and cook on low
heat for 4–6 hours.
PER SERVING Calories: 214 | Fat: 6 g | Protein: 6 g | Sodium: 522 mg | Fiber: 8 g |
Carbohydrates: 31 g | Sugar: 12 g
