One thing I forgot to say as the soup thickens you may need to add more water.
Also stir every 5-10 minutes so you do not have ingredients sticking to bottom of post.
Quinoa burgers
1/2 cup of ground quinoa (I grind in my coffee grinder)
finely cut chives and/or 1 finely cut small onion
1 tsp curry, hot sauce to taste, (or seasoning you like, )
1 egg white, salt
Water
Mix quinoa flour with salt, curry, hot sauce (or seasoning of your choice), add warm water to make a thick paste, let sit for about 15 minutes
add remaining ingredients (you can also add grated pumpkin or carrot)
form burgers and fry
These burgers give a good amount of protein, are fast to make (you can grind the quinoa in advance) and good substitute for meat and great snacks to take with you when you need something to eat like at work.

My mom used to boil brocolli until it was limp. Or she would cook frozen brocolli. I avoided brocolli until I found out a wonderful way to cook it by steaming.
Steamed brocolli is a regular on my table. Usually I can buy fresh brocolli any time of year in US. I cut the stems off of the tops and cut the stems in two the long way. I add 1/2 inch of water to pan and get boiling on high heat. I put the split stems on the bottom with the inside down and then put the florettes on top. If they are big I cut florettes in half.
After comes to a boil again I cook 5 minutes or until a fork enters easily but brocolli not well done. I take brocolli out of hot water to cool. If they are too well done, I put under water to stop the cooking process.
Notice how the brocolli is still yellowish green and is still firm
When the brocolli is overcooked it is darker duller green and mushy
