Runnning out of supper ideas BC Mom's not cooking
I'm completely running out of complete supper ideas because Mom isn't cooking for various reasons.
So since last week:
Thursday (Mom's at choir most Thursdays) homemade Mac and cheese (I alterative between this and Ramyeon on Thursdays) + Cut up Veggies
Friday (Mom was at Christmas Dinner party)- Western Egg sandwhich + Casear Salad
This Week:
Sunday (Mom's too full from her lunch)-Mircowave Chilli+ Cut up Veggies
Monday (tonight- Mom's too full from lunch): Mircowave Soup-?
Wednesday (Mom's out caroling) : don't know (another microwave chilli using the remains of what I have from last night?) +cut up veggies/Caesar salad
Thursday (choir practice): Ramyeon aka Ramen (no side veggies required)
* I'm running out of supper ideas for this week due to Mom's not cooking this week and I have only TV dinner left in my options after tonight without screwing up next Thursday's supper (Mac and Cheese).
Normally when I'm this low on running out of options- I would go get Fast food but that's not allowed for 1. Person reasons I will get to in a second and 2. Mom and I are going "out" on Friday into Toronto on some kind of "adventure"
The other reason I can't go "get fast-food" this week is basically "I had too many meals out last month" : 2 Meals from Wendy's, 1. Meal from Mr. Sub (Canadian Chain similar to Subway) and 1. Meal from Taco Bell. So when I have so many meals like that I try not to go out to Fast food the following month.
It's not just the main courses I have trouble with thinking up but due to Mom's teaching me unless I'm making Ramyeon, I have to have *some* kind of side dish. I had cut up veggies- Thursday, and Yesterday, and I will have Cut-up Veggies again on Wednesday so what else am I suppose to make? I had Caesar salad on Friday. So I don't have much choices left except a)cut up veggies again, or b)a tossed salad.
I would still need to cut up veggies if I got fast-food but I wouldn't need to figure out an entire meal plan when Mom's suppose to be cooking in the first place. Why did she even bother making a ** Meal plan when she knew she would be "too full" on Sunday and Monday due to events?
I wouldn't be having her food until Saturday due to the events that happened will happen (I have no idea what's going to happen tomorrow except Mom and I are helping my elderly friend to her hair place) and Mom and I are going into Toronto on Friday.
I think the other problem with having to make my own supper for this week and a half (2 days last week) is that at times (mac and cheese, or last night's Microwave chili) I have to use the microwave to either pre-cook veggies or cook the actual main course and at the same time I'm making my supper, Dad's also making his supper and he's has an addiction it seems to the toaster oven so it means when I go and need the microwave I have to turn it off, and remember it's being at "14mins" or whatever.
Not only that but to prevent a fire in the Toaster oven Dad places some of the stuff that's on (egg shells or lids containers) on top of the microwave so that makes it really difficult for me to get any of the microwave covers and because of Dad hurrying me along last night I forgot to put the cover on the bowl in the microwave last night. It's just lucky there wasn't any kind of explosion in the microwave due to a cover not being on.
*The only other option besides making my own supper is having Dad food but I got sick and tired of Dad food a long time ago between his "mistakes" -I mean he burned Chinese leftovers once! and others between 2013-2020 and the fact he got suppers ready way too early in August 2022 when it was just 2 of us for supper.
So any wonder why I'm running out of ideas for both main courses *and* side dishes because Mom's not cooking most of this week?
It's not like can complain to Dad about how fed up I am about having to cook for myself. He will say one of three things 1. "Well i offered you what I was going to have but you turned it down" 2. "If you're living on your own you would have to make your own supper every night" or 3. He would go on a rant about the "processed" Fast food.
I think another problem is that when Dad's in the kitchen at the same time I am (using the toaster oven or not) he has a habit of leaving the cupboard doors open which is a hazard for someone who is just over average height -let's say 5'5/5'6 vs. he's a half-giant basically.
@Disneywoman Perhaps deviled eggs? That and a small veggie platter for one with a dipping sauce.

1. too complicated for a one person meal. I know I have to boil the eggs but that's it. But let's just say making an omelet is a lot easier for me to make and I had that on Friday basically in sandwhich form. And 2. a "small veggie platter" is still cut up veggies and I had cut up veggies, last Thursday, and Sunday (last night) night.
Scalloped potatoes with Ham
Chicken Alfredo pasta with steamed broccoli
Rotisserie chicken + pesto+ mozzarella sandwhich
Get a sausage & veggies, dice up on a sheet pan, add seasoningand cook
Grilled Cheese and Soup
Tacos
Steamed or baked veggies always make a Great side, also I use Pinterest a lot to get new ideas
Sorry you're not getting more help from parents but I hope these ideas help some.

- Too complicated for just one person meal I don't even know how to make scalloped potatoes in the first place. I know the theory of how to make mashed potatoes- instant potatoes and milk.

-don't have any rotisserie chicken avaible and I don't know if we have any pesto. We do have mozz though.

- I don't know how to steam or baked veggies. I only know how to have them raw, either cut up or in a side salad. Otherwise have no idea of how to make them.
Okay I'm have been finding out through my Ramyeon cooking I can cook carrots but that's about it. I can pre-cook veggies (bell pepper, zunnichi and broccoli or Cauliflower in the microwave).
But if I'm not making supper for the whole family I don't really want to have a complicated meal. I want it to be easy to prepare and I can have it on the table in a mostly timely manner (The only thing not timely is the cooking of Pasta for 10 mins with Mac and Cheese)
@Disneywoman put ricepaper on a pan, put veggies and cheese on it and let it cook for 5 min.
Pizza toast:- just toast up a bread and put veggies, sauce and lots of cheese on it then put it in the oven.
Egg fried rice:- leftover rice put it in pan and put an egg in it ( you kinda scramble your eggs with the rice) and add veggies
Take chickpea flour + water, add veggies and spices in it, put the batter on the pan ( put it in the same way you would do to make pancakes) let it cook on both sides.
Before I go to bed- I just want to say I don't really want to have to work with any kind of meat because except for ham, I need help with every other kind of meat to work with chicken or pork or beef, unless it's grounded versions
To be frank If it's a one-person meal I don't really want to deal with grounded meat when I can do that on Fridays when I do cooking normally for the family.
@Disneywoman You are right, it seems you already went through the usual simple meals already throughout the week. I can't think of anything apart from something my mother taught me when I was young. English muffins with a little pizza sauce and mozzarella cheese and bake it on a baking sheet in the oven. Very simple. You can even use a bagel and make bagel pizza, but that is more modern.... I never had it with bagel personally.
@Jaay80 I know how to make English Muffin Pizza but I just don't really want to have Pizza either because my family had medium-size pizza last night.
Every time that Mom and I help Grace we get home late and that means Dad goes get Pizza. So that's Medium size pizza. And on normal weeks.. when Mom and I are home on Fridays every other Friday is a Pizza night.
