Looking for new recipes - Please share yours!
Hi everyone!
I've recently made a broccoli, cheese and rice casserole which I absolutely LOVED!
I love to go exploring in the kitchen and make stuff that I've never made before. Danish gastronomy is not exactly known for it's delicate tastes, so I'd love to hear about what you people have recently made that you really liked - preferably something traditional from your home country.

@Gl3nn so I'm in the UK. English food is boring and I cook everything but English food whenever I make the effort to cook.

@Sasher I've been to London 6-7 times now as well as a detour to Bath to see Stonehenge and I definitely know that England is not known for their culinary endeavours either, but I have to admit that a traditional english meat pie is one of my favourite autumn comfort foods! Steak & ale pie, fish pie, chicken & mushroom pie, name any pie and I'll probably love it! I just came back from visiting Thetford and stayed in Norfolk for a week and I was actually suprised to see how much white bread, eggs, fries, ham, bacon and cheese the menu cards consist of. I don't remember it like that, but then again, London is not necesarilly the epitome of what could be deemed the "real" England :-)
Thanks for the quesadilla recommendation! I've tried almost every type of Mexican food there is out there. I used to live in Mexico (Oaxaca) for a year, and so I've come to absolutely love the country's cuisine and I often find myself making Mexican (or Mexican-inspired) food.

@Gl3nn pie did spring to mind to be honest. It's a freestyled recipe that my grandma used to make so I have no idea what the recipe is.

I also like that it's relatively easy to make, and that I can make bigger batches of it that I can take with me to uni or eat for lunch/dinner the next day. I'm also a huge fan of beans in general. @generousBeing7908 Oh wauw! I actually love roasted veggies in the oven. I sometimes do a mix of root vegetables and then just throw them in a bag with a mix of oil and seasoning. They always turn out really good after 20-40 minutes in the oven. I'm most definitely also gonna try this one - especially since I really love salmon :) Thanks!

@Sasher This actually looks REALLY yummy! And it's hearty, nutritious and healthy too! Plus it's nice that I can cook a big ol' bowl of rice so I can have curry for several days or even freeze it for later. Thanks for sharing, Sasher! :)

@Gl3nn Chicken pot pie is one of my absolute fav recipes from childhood (Southeastern US). When I do not feel like making a crust, I put biscuits on top (not cookies, but what the English would call savory scones lol and btw, this recipe is FAB Wild Garlic & Cheddar Scones - Donal Skehan | EAT LIVE GO).
Chicken Pot Pie Recipe (allrecipes.com) This is a great basic recipe. Personally, I omit celery, add a cup of cooked, diced potatoes, and in the roux for the sauce, I add a bay leaf (laurier) and about a teaspoon of Homemade Poultry Seasoning Recipe (allrecipes.com).
It's a labor of love, and so, so worth it I think! Thank you for this thread (I am loving the suggestions) and happy cooking!Â
Cheesy Loaded Baked Potato Soup!
Ingredients
- 4 pounds russet potatoes (about 7 medium potatoes)
- 1/4 pound thick sliced bacon, cut crosswise into 1/8-inch slices (lardons)
- 1 large onion, finely chopped (about 2 cups)
- 2 ribs celery, finely chopped
- 6 cups chicken stock
- 1 teaspoon kosher salt, add more to your liking
- 1/8 teaspoon ground white or black pepper
- 2 to 4 tablespoons heavy cream
Garnishes:
- Grated sharp cheddar cheese
- Sour cream
- Minced chives
- Crumbled bacon (from Step 2 in method)
Method
- Bake the potatoes: Scrub the potatoes clean and poke them all over with the tines of a fork or paring knife (this is so they don't explode from internal pressure building up as they cook). Place on a foil lined baking sheet and bake at 400°F for 1 hour, or until easily cut through with a knife. Remove and let cool enough to handle. (To speed up cooling, slice them in half lengthwise.)
- Cook the bacon:Â Place bacon lardons in a large, thick bottomed Dutch oven (about 5 to 6 quart pot). Heat on medium high until the bacon starts to brown then lower the heat to medium. Cook until the bacon has rendered most of its fat and the lardons are browned and crispy. Remove the cooked bacon and set aside. Remove all but 1 tablespoon of bacon fat from the pan. (Do not discard bacon fat in your sink, it will clog the drain. Pour the fat into a jar and let it cool and solidify. Then either scoop it out and discard it or use it for another purpose.)
- Cook onion and celery in the bacon fat:Â Add the chopped onion and celery to the remaining bacon fat in the pot. Cook for 2 minutes on medium high, then lower the heat to low, and cover the pot. Let cook slowly on low heat for 15 to 20 minutes.
- Scoop out baked potatoes, add it and chicken stock to pot:Â When potatoes are cool enough to handle, scoop out the insides to a bowl. Then add it to the cooked onion and celery mixture along with 6 cups chicken stock. Add a teaspoon of kosher salt. Bring the soup to a simmer and reduce the heat to low. Use a potato masher to mash the potatoes into the stock.
- PurĂŠe some or all of the soup:Â Cook the potato soup for about 5 minutes, then use an immersion blender to purĂŠe about half of the soup if you want a slightly chunky soup, or purĂŠe all of it if you want a smoother soup.
- Add cream:Â Stir 2 to 4 tablespoons of heavy cream into the soup if you want a creamier soup. Add more salt and pepper to taste.
- Top with grated cheddar, sour cream, chives, bacon:Â Pour into bowls and top with grated cheddar, sour cream, chives, and crumbled crispy bacon.
