Great post and great idea!...

  1. Although this is not necessarily my "favorite", however, recently, I found myself making
    "BELL-PEPPER TACOS"!....


**Bell-peppers (any color)

**Ground Turkey (or meat protein of choice, Tofu etc...)

**Low-Sodium (or Organic) Taco Seasoning

**Organic Salsa (optional)

**Organic Shredded Cheese of choice

**Lettuce, Tomatoes,

**Organic Fat-free Refried Beans

Cut Bell-peppers in half, add to air-fryer (or in oven on baking sheet) for 5-10 minutes to soften

Brown the Ground Turkey (or meat choice) in a pan medium heat with spray or virgin olive oil

Add Taco Seasoning per instructions after browning meat

Add/mix-in Shredded cheese, tomatoes etc.... (or use to top)!

Scoop in Meat mix, and refried beans and fill up Bell-peppers

Top with more shredded cheese (and Salsa *optional*)
