How can I manage and organise my work and actually stick to it, without letting things come in the way?

Remember that "things" always come in the way. When you schedule you need to factor time for unforeseen activities in. For example, if you schedule in planned activity X for 1 hour, leave 15 minutes after that for anything new that might need doing or if activity X needs a bit more time.
But you also need to be strict with managing new things. If some new request needs your attention but that request is going to take an hour or more you need to either replace one of your planned events or plan that new request in to the next day.
Don't be afraid of saying no. Everybody in a company thinks their need is the most important, most pressing and most urgent. Prioritise and plan fairly, which usually means first-come-first-serve unless they can justify that a request really is urgent.

Create a flexible and manageable timetable that you can reasonably stick to, and work in breaks in between your work. Also, don't beat yourself up if you find the schedule difficult to stick to at first - just do the best you can.

As for me, I do what is called "plan my work and work my plan". I decided what goals I need to accomplish daily as well as weekly and put this in writing on an At a Glance Calendar. There is lots of room on it to list objectives. I have a great visual in front of me for the day, for the week and even some things for the month. I feel that I plan things this way, I get a good idea of the "have to's versus the want to's" and I leave gaps in between for breaks or for things that come up last minute. Another thing that could be good is learning to say the word "no" to others but in a really polite way. And sometimes it can even be phrased as I'm not saying no, just saying not right now and can I get back to you on that? I hope this was helpful.
