You are very afraid of this teacher, I see. But try to consider: what is scarier?
You can go to school, admit that you could not finish the essay, try to offer some explanation and excuse, and be scolded and maybe punished in front of others. It will be bad for some time, a bit humiliating, but maybe someone else will also be on your same boat, or maybe they will understand your situation and how difficult it can be.... You you will survive, swearing to yourself you will not to get in this situation ever again, and next time you will do better.
Option 2 is to run away. To yield to your fears and avoid any sort of punishment and responsibility. Blame it entirely on others. Learn to hide and to dodge whatever is unpleasant, difficult or makes you anxious. Be better at running away, at coming up with excuses, at lying.
Which one you think is scarier? To accept a punishment we (at least in part) deserve, or to run away from responsibilities of any kind? Sometimes getting hurt is an opportunity for growth. Hiding away and hurting yourself is just the opposite of it.

Perhaps you could talk to one of the other teachers, if you're only scared of this one. Is there a course coordinator? I'd talk to them if I had this problem. You should probably explain why you haven't been able to complete the assignments, and apply for an extension or get a medical certificate, if that's a possibility. Other people you could talk to are counsellors on campus, the school office, the student union or other students.

The best thig to do in this situation is to be completley honest with your teacher. You said he is strict and youre afraid he will punish you but in my experience the best thing you can do is tell the truth and hope that they will allow you to make it up. When a teacher senses a lie they usually will send you away with no guilt so do not do that! If the teacher still says no continue to ask if there is any extra credit available to show them you are willing to do whatever it takes to pass their class.

despite your emotions, you have to be able to communicate what you are feeling. by doing so, you will be able to have a voice and be heard. once the teacher hears you advocate for yourself, by speaking up, maybe he wouldn't seem so scary after all. then as time progresses, you will possible have more courage to speak up and you will be able to speak up more frequently. knowing that communication is the best way we can get out feelings and emotions out to another human. it may seem scary at first only because it's new but after that, you will get the hang of it and then it wouldn't be so bad there after.
