Sex is generally defined as the binary characteristic that is assigned at birth, i.e. male or female, and relates to your body's physical properties (specifically the 'sex organs'). Gender is more complex, as it can be a spectrum from 'entirely male' to 'entirely female', and there are people that feel they fit in anywhere in between the two or with neither. Gender is about which set of characteristics you identify with the most, and can change more easily.

Here's something I use to remember: Sex is in your pants, Gender is in your mind, and Orientation is in your heart. Sex is what your genitals tell you, and gender is what you personally feel like you are. Personally, my gender matches my sex, but for many, they don't match. Hope this helps.

Based in my understanding, sex is what you are assigned at birth (what your chromosomes and genitals say you are) whereas gender is what you feel you are. So you could have breasts, a vagina, etc, but feel on the inside like you are male or another gender or without a gender at all, and vice versa. Itspronouncedmetrosexual.com has some good resources for this, too.
