They will see if your in immediate danger, if not they'll talk to you about what's wrong. They will try and help you to figure out a good next step and discuss your problems. If you are they'll tell you to hang up and call 911

In my personal experience when you call the suicide hotline, someone will talk to you about your issues and advise you on ways to deal with them, if you're believed to be in a immediate danger to yourself or others, police or ambulance service would be called

This completely depends on the hotline you call. Some are run by trained counselors, others are more of a listening service, either way they are trained to talking to people who are going through really difficult times. They will let you talk about whatever is on your mind and support you as best as they can.
You may want to search on the internet the particular hotline you are planning to call, they usually have a website and will have their confidentiality policy on there, which will explain in what circumstances they may need to break confidence and send for help. Some helplines like Samaritans in the UK will never tell anyone anything you say, they just want you to not be alone, even if you have already done something to hurt yourself.

I think they offer a listening ear and show that somebody cares about them whilst asking them questions about themselves which make them question their own decision as to if and why they want to end their life and without giving advice, suggest how things could change to make their life better

They will check to see if you are in imminent danger. They will then talk more with you about your feelings, and help you to stay safe. They can also refer you to mental health services. Please reach out for help.
