Because once they were a part of your life, possibly as of they were one with you and you could no longer live with them. If they made a place in your heart then once they leave there is a "hole" in your heart. Someone who was once a part of you being gone would definitely hurt you

Because sometimes it's too hard to leave the person you once loved or still love. Breaking up with the person you once cared about or still care about is hard because it's not something you can do today and forget about tomorrow. You probably talked to that person every day and had feelings for him/her so there is going to be a change in your life. That change will make you sad, the fact that you're not going to be able to be with them anymore or talk to them anymore. It's okay though, that's normal. But it's not forever, you'll get over it. Things happen because they have to happen, lots of love

There are probably many different reasons but the main one that I have seen is that you miss the connection you had with them. You miss the possible future you would have had with them. You miss the way they looked at you or held you. Break ups hurt a lot. It feels like someone died. And in a way that is true. Your future with them died.
