Well, that depends on the type of relationship you have and of the lenght of the relationship. You should feel comfortable talking about anything, your boyfriend should be your friend in the first place, a person that you can talk nonsens to or important, meaningful stuff.

Imagine you're with him in person and talk about all the stuff you'd tell him normally. It can be stressful at the beginning, but you'll get used to it slowly. Also, little silence is not such a big problem if that makes you nervous :) you can make a list of what happened during the day and you'd like to tell him about before you call him. That could help too :) good luck.
