Chocolate chip cookies [recipe link here]

INGREDIENTS:

  • 1/2 cup butter
  • 1/2 cup granulated sugar [if you want it less sweet use 1/4 cup]
  • 1/4 cup brown sugar packed
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 1 ¾ cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 cup semisweet chocolate chips

INSTRUCTIONS:

  1. Preheat oven to 350 degrees F
  2. Melt butter in microwave, about 40 seconds
  3. Mix butter and sugars in a large bowl
  4. Stir in vanilla and egg
  5. Add flour, baking soda, and salt
  6. Mix until just combined
  7. Stir in chocolate chips [these make great sugar cookies too so chocolate chips are optional]
  8. Scoop out 1.5 tablespoons of dough and place around 2 inches apart on a baking sheet
  9. Bake for 7 to 10 minutes. Cookies will look slightly underbaked in the middle, but that’s alright.

Vanilla mug cake [recipe link here]

INGREDIENTS:

- 4 tablespoons all purpose flour

- 3 tablespoons milk

- 1 tablespoon sugar

- 1 tablespoon butter

- 1/4 teaspoon baking powder

- 1/4 teaspoon vanilla extract

- pinch of salt to taste

- sprinkes [optional but recommended]

INSTRUCTIONS:

  1. Mix all ingredients in a large to medium sized mug, make sure that no flour sticks to the bottom and everything is thoroughly combined.
  2. Microwave on high for 1 minute. Cake will look slightly undercooked when done, but do not be fooled by this trickery. It is deceiving you in an attempt to cause you to overcook it. Simply let the cake rest for a small while or eat it at that moment, and you will be delighted. Succumb to its lies and you will be greeted by a delicious but dry and overcooked cake.
